Chicken Broccoli Alfredo
The only time I cook pasta is when I'm lazy. So lazy that I boil some pasta, open a jar of store-bought sauce, and voilà. I did this once at a hostel when I was travelling and I still remember the look of horror I got from a fellow traveller. No vegetables?? Yes, no vegetables and no meat. The unfiltered judgment was a wakeup call. I had to stop buying pasta altogether to avoid this awfully innutritious recipe!
But I walked into a grocery store last week and both of those things were on sale. $1 for a box of pasta (usually $2 or more) and $3 (which is only 50 cents off, but still) for a jar of Alfredo sauce. I couldn't resist! But I promised myself that I wouldn't resort to my college-junk-food recipe.
Still, pasta is a food of choice for when I'm lazy. So I came up with a one-pot, 15 minutes recipe!
Ingredients for 2 servings:
2 servings of penne (however much that is for you)
1/2 jar of Alfredo sauce (200ml-ish)
1 small head of broccoli (frozen broccoli works too!)
1 boneless chicken thigh
1 tsp garlic powder
lots of black pepper
some salt
Instructions:
While you wait for the water to boil, cut chicken thigh into small bite-sized (1cm) cubes.
Add pasta and chicken thighs into boiling water. Start the timer for 10 minutes!
Chop up broccoli and add them into the pot when there's 2 minutes left on the timer.
Try the pasta, make sure they're cooked, and drain the water. I do this by using the lid as a cover. It's less dishes to wash at the end!
Add alfredo sauce, garlic powder, salt, and pepper, and heat on stove until done.
I hope you try this recipe if you are eating like me from 6 months ago! This recipe is not that much more work, I promise.
