WHAT I EAT IN A DAY || accidental vegetarian

It's Sunday, not quite sunny but bright enough for the light to shine into my bedroom and wake me up a little bit sooner than I'd like to. I scrubbed my eyes and was out of bed by 7:30am.

I debate between avocado & toast or quinoa salad. I reached for the day-old salad in my fridge and began my morning with some healthy proteins and YouTube videos. (I need to share with you guys my recipe because I've been in love with this for quite some time. I actually made some more tonight with different fruits and vegetables to munch on for the upcoming week.)

11:00am - My friend and I went for a fruit haul at a nearby produce store. If you are in Vancouver, check out this place on 10th and Sasamat. Head to the back and look for the box labelled $1.50/bag. My friend and I bought 4 bags together and split everything in half. I got 3 apples, 2 mangoes, 2.5 grapefruits, and 1.5 eggplants, all for three dollars! We stopped by for coffee and some baked goods afterwards. The baked good made my day vegetarian instead of vegan.. it was still delicious and the owner was just the friendliest. I will definitely be going back for more.

3:45pm - I ate some leftover curry from last night (shown above) before I trekked over to my bartending shift. Made from scratch as always, with lots of beans, potatoes, and onions, topped with cilantro and lime.

I admit, there weren't a lot of greens in my food today so I will have to work on that tomorrow. To clarify, I am not vegan nor am I vegetarian. At the moment I'm focusing on fueling my body with healthy foods and well-balanced meals. I try to eat less meat for enviornmental reasons, but I haven't been able to justify a complete transition for a couple of reasons that I won't get into now. I hope these posts make you want to eat healthy and eduate yourself too, regardless of your position on meat and dairy.
